  • 2 large Japanese sweet potatoes peeled and cut into chunks
  • ¼ cup Sugar
  • 2 tablespoon Soy sauce
  • 1 tablespoon Mirin
  • 1 tablespoon Vegetable oil
  • 1 tablespoon Sesame seeds optional, for garnish

Instructions 

  1. Heat oil in a large skillet over medium heat.
  2. Add sweet potato chunks and cook until they start to soften, about 10 minutes.
  3. Add sugar, soy sauce, and mirin. Stir to coat the potatoes.
  4. Continue to cook, stirring occasionally, until the potatoes are tender and caramelized, about 10 more minutes.
  5. Garnish with sesame seeds if desired. Serve warm.
