Ingredients 

Main Ingredients

  • 4 cups water
  • 1 piece kombu (dried kelp) about 4x4 inches
  • 1 cup bonito flakes packed

Instructions 

  1. 1. Wipe the kombu with a damp cloth to clean it. Do not remove the white powdery substance, as it contains umami.
  2. 2. In a pot, add the water and kombu. Let it soak for about 30 minutes.
  3. 3. Slowly bring the water to a near boil over medium heat. Just before it starts boiling, remove the kombu.
  4. 4. Add the bonito flakes to the pot and let it boil for about 30 seconds. Turn off the heat and let the flakes sink to the bottom.
  5. 5. Strain the liquid through a fine-mesh strainer or cheesecloth. Your dashi is ready to use.
