Dorayaki is a popular Japanese confection consisting of two small pancake-like patties filled with sweet red bean paste.

Batter
- 2 large Eggs
- 50 g Sugar
- 1 tablespoon Honey
- 100 g All-purpose flour
- 1 teaspoon Baking powder
- 2 tablespoon Water
Filling
- 150 g Sweet red bean paste
In a mixing bowl, whisk together the eggs, sugar, and honey until frothy.
Sift in the flour and baking powder, then mix until smooth.
Add water and mix until the batter is slightly runny.
Heat a non-stick pan over medium heat and pour small amounts of batter to form pancakes.
Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
Remove from pan and let cool. Spread red bean paste on one pancake and sandwich with another.
