  • 200 g young ginger peeled and thinly sliced
  • 1 cup rice vinegar
  • ½ cup sugar
  • 1 teaspoon salt

Instructions 

  1. 1. Peel and thinly slice the ginger.
  2. 2. Boil the ginger slices in water for 2 minutes, then drain.
  3. 3. In a pot, combine rice vinegar, sugar, and salt. Bring to a boil until sugar dissolves.
  4. 4. Place the ginger slices in a jar and pour the hot vinegar mixture over them.
  5. 5. Let it cool to room temperature, then refrigerate for at least 24 hours before serving.
