Ingredients

  • 1 lb Chicken Thighs boneless, skinless
  • 2 cups Dashi Stock
  • 1 large Carrot sliced
  • 2 medium Potatoes peeled and cubed
  • 1 large Onion sliced
  • 2 tablespoon Soy Sauce
  • 2 tablespoon Mirin
  • 1 tablespoon Sugar
  • 1 tablespoon Vegetable Oil

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chicken thighs and cook until browned.
  3. Add the onion, carrot, and potatoes. Cook for a few minutes until the vegetables start to soften.
  4. Pour in the dashi stock, soy sauce, mirin, and sugar. Bring to a boil.
  5. Reduce the heat and let it simmer for about 30-40 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Serve hot and enjoy!
