Ingredients 

Main Ingredients

  • 4 cups Dashi stock
  • 1 tablespoon Soy sauce
  • 1 teaspoon Salt
  • 1 teaspoon Mirin
  • 2 pieces Mushrooms (shiitake or enoki) sliced
  • 2 pieces Kamaboko (fish cake) sliced
  • 2 pieces Mitsuba (Japanese parsley) chopped

Instructions 

  1. 1. In a pot, bring the dashi stock to a gentle simmer.
  2. 2. Add soy sauce, salt, and mirin. Stir to combine.
  3. 3. Add the sliced mushrooms and kamaboko. Simmer for 5 minutes.
  4. 4. Ladle the soup into bowls and garnish with chopped mitsuba.
