Japanese Clear Soup (Suimono) Recipe
A light and delicate Japanese clear soup, perfect as a starter or side dish.

Main Ingredients
- 4 cups Dashi stock
- 1 tablespoon Soy sauce
- 1 teaspoon Salt
- 1 teaspoon Mirin
- 2 pieces Mushrooms (shiitake or enoki) sliced
- 2 pieces Kamaboko (fish cake) sliced
- 2 pieces Mitsuba (Japanese parsley) chopped
1. In a pot, bring the dashi stock to a gentle simmer.
2. Add soy sauce, salt, and mirin. Stir to combine.
3. Add the sliced mushrooms and kamaboko. Simmer for 5 minutes.
4. Ladle the soup into bowls and garnish with chopped mitsuba.
