Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 large Onion diced
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 1 lb Chicken Breast cut into bite-sized pieces
  • 2 tablespoon Curry Powder
  • 1 can Coconut Milk
  • 2 cups Chicken Broth
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Sugar
  • 2 cups Vegetables carrots, potatoes, and peas
  • to taste Salt and Pepper

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the diced onion and cook until translucent.
  3. Add the minced garlic and grated ginger, cook for another minute.
  4. Add the chicken pieces and cook until browned.
  5. Stir in the curry powder and cook for another minute.
  6. Pour in the coconut milk, chicken broth, soy sauce, and sugar. Bring to a boil.
  7. Add the vegetables and simmer until they are tender.
  8. Season with salt and pepper to taste. Serve hot.
