  • 200 g soba noodles
  • 1 cucumber julienned
  • 1 carrot julienned
  • 2 green onions chopped
  • 2 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 tablespoon sesame seeds toasted

Instructions 

  1. 1. Cook soba noodles according to package instructions. Drain and rinse under cold water.
  2. 2. In a mixing bowl, combine soy sauce, rice vinegar, sesame oil, and sugar. Mix well.
  3. 3. Add cooked noodles, cucumber, carrot, and green onions to the bowl. Toss to combine.
  4. 4. Sprinkle with toasted sesame seeds before serving.
