  • 2 cups Corn kernels fresh or frozen
  • 1 cup Cucumber diced
  • ¼ cup Red onion finely chopped
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Soy sauce
  • 1 tablespoon Sesame oil
  • 1 teaspoon Sugar
  • 1 tablespoon Sesame seeds toasted

Instructions 

  1. 1. In a mixing bowl, combine corn, cucumber, and red onion.
  2. 2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, and sugar until the sugar is dissolved.
  3. 3. Pour the dressing over the vegetables and toss to combine.
