Ingredients

  • 2 Japanese cucumbers thinly sliced
  • 1 teaspoon Salt
  • 2 tablespoon Rice vinegar
  • 1 tablespoon Sugar
  • 1 teaspoon Soy sauce
  • 1 teaspoon Sesame oil
  • 1 tablespoon Sesame seeds toasted

Instructions 

  1. 1. Thinly slice the cucumbers and place them in a mixing bowl.
  2. 2. Sprinkle salt over the cucumbers and let sit for 10 minutes.
  3. 3. Rinse the cucumbers under cold water and drain well.
  4. 4. In a small bowl, mix rice vinegar, sugar, soy sauce, and sesame oil.
  5. 5. Pour the dressing over the cucumbers and toss to combine.
  6. 6. Sprinkle toasted sesame seeds on top before serving.
