  • 500 g Chicken Thighs cut into bite-sized pieces
  • 2 Carrots peeled and chopped
  • 2 Potatoes peeled and chopped
  • 1 Onion chopped
  • 3 cups Water
  • 100 g Japanese Curry Roux

Instructions 

  1. 1. Heat oil in a large pot over medium heat. Add chicken and cook until browned.
  2. 2. Add onions and cook until translucent.
  3. 3. Add carrots and potatoes, cook for a few minutes.
  4. 4. Pour in water and bring to a boil. Reduce heat and simmer until vegetables are tender.
  5. 5. Add curry roux and stir until dissolved. Simmer until the sauce thickens.
  6. 6. Serve hot over steamed rice.
