1. In a large pot, heat a bit of oil over medium heat. Add the diced onion and cook until translucent.
2. Add the minced garlic and ginger, cook for another minute until fragrant.
3. Stir in the curry powder and cook for another minute.
4. Add the lentils, vegetable broth, carrots, and potatoes. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the lentils and vegetables are tender.
5. Stir in the soy sauce, tomato paste, salt, and black pepper. Simmer for another 5 minutes.
