Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable oil
  • 1 large Onion, sliced
  • 2 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 1 lb Chicken breast, sliced
  • 4 cups Chicken broth
  • 2 blocks Japanese curry roux
  • 2 packs Ramen noodles
  • 2 stalks Green onions, chopped
  • 1 cup Carrots, sliced
  • 1 cup Potatoes, diced

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the sliced onion, garlic, and ginger. Sauté until fragrant.
  3. Add the sliced chicken breast and cook until no longer pink.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the Japanese curry roux and stir until dissolved.
  6. Add the carrots and potatoes. Simmer until vegetables are tender.
  7. Cook the ramen noodles according to package instructions. Drain and set aside.
  8. Divide the cooked noodles into bowls. Pour the curry mixture over the noodles.
  9. Garnish with chopped green onions and serve hot.
