Main Ingredients
- 400 g Udon noodles fresh or frozen
- 200 g Chicken thigh cut into bite-sized pieces
- 1 Onion sliced
- 1 Carrot sliced
- 2 cups Water
- 100 g Japanese curry roux store-bought
- 2 tablespoon Vegetable oil
- 2 stalks Green onions chopped, for garnish
Heat the vegetable oil in a large pot over medium heat.
Add the chicken and cook until browned.
Add the onion and carrot, and cook until softened.
Pour in the water and bring to a boil.
Reduce the heat and simmer for 10 minutes.
Add the curry roux and stir until dissolved.
Cook the udon noodles according to the package instructions, then drain.
Add the cooked noodles to the curry and mix well.
Serve hot, garnished with chopped green onions.
