Ingredients

  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 2 tablespoon flour
  • 2 cups beef stock
  • 1 cup red wine
  • 2 tablespoon tomato paste
  • 1 bay leaf
  • to taste Salt and pepper

Instructions 

  1. Melt butter in a pan over medium heat.
  2. Add onion, carrot, and celery. Cook until softened.
  3. Stir in flour and cook for 2 minutes.
  4. Gradually add beef stock and red wine, stirring constantly.
  5. Add tomato paste and bay leaf. Simmer for 1 hour.
  6. Season with salt and pepper. Strain before serving.
