Ingredients 

Main Ingredients

  • 2 large Japanese eggplants sliced
  • 2 tablespoon Miso paste
  • 1 tablespoon Soy sauce
  • 1 tablespoon Mirin
  • 1 tablespoon Sugar
  • 2 tablespoon Vegetable oil
  • 2 cloves Garlic minced
  • 1 tablespoon Sesame seeds toasted

Instructions 

  1. 1. In a mixing bowl, combine miso paste, soy sauce, mirin, and sugar. Set aside.
  2. 2. Heat vegetable oil in a skillet over medium heat. Add garlic and cook until fragrant.
  3. 3. Add sliced eggplants to the skillet and cook until tender.
  4. 4. Pour the miso mixture over the eggplants and stir to coat evenly. Cook for another 2-3 minutes.
  5. 5. Garnish with toasted sesame seeds before serving.
