Ingredients 

Main Ingredients

  • 500 g White Fish Fillets cut into chunks
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 2 tablespoon Curry Powder
  • 400 ml Coconut Milk
  • 1 cup Fish Stock
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Sugar
  • to taste Salt
  • to taste Black Pepper
  • 1 tablespoon Vegetable Oil

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and grated ginger, cook for another 2 minutes.
  4. Stir in the curry powder and cook for 1 minute to release the flavors.
  5. Pour in the coconut milk, fish stock, soy sauce, and sugar. Bring to a simmer.
  6. Add the fish chunks and simmer gently until the fish is cooked through, about 10 minutes.
  7. Season with salt and black pepper to taste. Serve hot with rice.
