Instructions
1. Pat the eel fillets dry with paper towels.
2. Dredge the eel fillets in flour, shaking off any excess.
3. Dip the floured eel fillets into the beaten eggs.
4. Coat the eel fillets with panko breadcrumbs.
5. Heat the vegetable oil in a frying pan over medium heat.
6. Fry the eel fillets until golden brown and crispy, about 3-4 minutes per side.
7. Remove the eel fillets from the pan and drain on paper towels.
8. Serve hot with your favorite dipping sauce.
