  • 2 large Eggplants sliced into rounds
  • ½ cup All-purpose flour
  • 2 large Eggs beaten
  • 1 cup Panko breadcrumbs
  • 1 cup Vegetable oil for frying
  • to taste Salt

Instructions 

  1. 1. Slice the eggplants into rounds.
  2. 2. Dredge each slice in flour, then dip in beaten eggs, and coat with panko breadcrumbs.
  3. 3. Heat vegetable oil in a frying pan over medium heat.
  4. 4. Fry the eggplant slices until golden brown on both sides.
  5. 5. Drain on paper towels and season with salt to taste.
