  • 1 cup Cucumber, julienned
  • 1 cup Carrot, julienned
  • ¼ cup Red Bell Pepper, thinly sliced
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Sesame Oil
  • 1 teaspoon Sugar
  • 1 tablespoon Sesame Seeds
  • 2 tablespoon Chopped Green Onions

Instructions 

  1. 1. Cook the glass noodles according to the package instructions. Drain and rinse under cold water.
  2. 2. In a large mixing bowl, combine the cooked noodles, cucumber, carrot, and red bell pepper.
  3. 3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and sugar until the sugar is dissolved.
  4. 4. Pour the dressing over the noodle mixture and toss to combine.
  5. 5. Garnish with sesame seeds and chopped green onions before serving.
