Main Ingredients
- 2 tablespoon Vegetable Oil
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, grated
- 2 tablespoon Green Curry Paste
- 1 cup Coconut Milk
- 2 cups Vegetable Broth
- 1 cup Carrots, sliced
- 1 cup Bell Peppers, sliced
- 1 cup Snow Peas
- 1 tablespoon Soy Sauce
- 1 tablespoon Lime Juice
- 1 cup Basil Leaves
Heat the vegetable oil in a large pot over medium heat.
Add the chopped onion and cook until translucent.
Add the minced garlic and grated ginger, cook for another minute.
Stir in the green curry paste and cook for 2 minutes.
Pour in the coconut milk and vegetable broth, bring to a simmer.
Add the carrots, bell peppers, and snow peas. Cook until vegetables are tender.
Stir in the soy sauce and lime juice.
Remove from heat and stir in the basil leaves before serving.
