Ingredients 

Pancake Batter

  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 2 tablespoon Sugar
  • ½ teaspoon Salt
  • ¾ cup Milk
  • 2 large Eggs separated
  • 1 teaspoon Vanilla extract
  • 1 cup Mango, diced

Instructions 

  1. In a mixing bowl, whisk together flour, baking powder, sugar, and salt.
  2. In another bowl, mix milk, egg yolks, and vanilla extract.
  3. Combine the wet and dry ingredients, mixing until smooth.
  4. In a separate bowl, beat egg whites until stiff peaks form.
  5. Gently fold the egg whites into the batter.
  6. Heat a non-stick pan over medium heat and pour batter to form pancakes.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown.
  8. Top with diced mango and serve warm.
