- 2 large eggplants cut into thick slices
- 3 tablespoon miso paste
- 2 tablespoon mirin
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 tablespoon vegetable oil
1. Mix miso paste, mirin, soy sauce, and sugar in a bowl.
2. Heat oil in a frying pan over medium heat.
3. Add eggplant slices and cook until golden brown on both sides.
4. Pour the miso mixture over the eggplants and cook for another 2-3 minutes.
5. Serve hot.
