Main Ingredients
- 200 g Soba noodles
- 200 g Mixed mushrooms (shiitake, enoki, shimeji) sliced
- 1 Onion sliced
- 2 cloves Garlic minced
- 2 tablespoon Soy sauce
- 1 tablespoon Mirin
- 1 tablespoon Vegetable oil
- 2 cups Vegetable broth
- 1 Green onion chopped, for garnish
1. Cook the soba noodles according to the package instructions. Drain and set aside.
2. Heat the vegetable oil in a pan over medium heat. Add the sliced onion and garlic, and sauté until fragrant.
3. Add the mixed mushrooms to the pan and cook until they are tender.
4. Pour in the vegetable broth, soy sauce, and mirin. Bring to a simmer.
5. Add the cooked soba noodles to the pan and toss to combine. Cook for another 2-3 minutes until everything is heated through.
6. Serve the noodles in bowls, garnished with chopped green onion.
