Ingredients

  • 2 cups Japanese short-grain rice
  • 1 cup Mixed mushrooms (shiitake, shimeji, enoki) sliced
  • 2 tablespoons Soy sauce
  • 1 tablespoon Mirin
  • 1 teaspoon Salt
  • 2 cups Water

Instructions 

  1. Rinse the rice under cold water until the water runs clear.
  2. Combine the rice, water, soy sauce, mirin, and salt in the rice cooker.
  3. Add the sliced mushrooms on top of the rice mixture.
  4. Start the rice cooker and cook according to the manufacturer's instructions.
  5. Once cooked, fluff the rice with a rice paddle and serve hot.
