Ingredients 

Salad Ingredients

  • 200 g soba noodles cooked and cooled
  • 1 carrot julienned
  • 1 cucumber julienned
  • 2 tablespoon sesame seeds toasted

Dressing Ingredients

  • 3 tablespoon soy sauce
  • 2 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon ginger grated
  • 1 clove garlic minced

Instructions 

  1. Cook the soba noodles according to the package instructions. Drain and rinse under cold water. Set aside.
  2. In a large mixing bowl, combine the cooked noodles, carrot, cucumber, and toasted sesame seeds.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic.
  4. Pour the dressing over the noodle mixture and toss to combine.
  5. Serve immediately or chill in the fridge for 30 minutes before serving.
