Ingredients 

Main Ingredients

  • 200 g Udon noodles
  • 1 l Chicken broth
  • 2 tablespoon Soy sauce
  • 1 tablespoon Mirin
  • 1 clove Garlic, minced
  • 1 teaspoon Ginger, grated
  • 2 pcs Green onions, sliced
  • 1 cup Mushrooms, sliced
  • 1 cup Spinach

Instructions 

  1. 1. Cook the udon noodles according to the package instructions. Drain and set aside.
  2. 2. In a pot, bring the chicken broth to a boil. Add soy sauce, mirin, garlic, and ginger. Reduce heat and let it simmer for 5 minutes.
  3. 3. Add mushrooms and cook for another 5 minutes.
  4. 4. Add the cooked udon noodles, spinach, and green onions. Cook for 2-3 minutes until the spinach is wilted.
  5. 5. Serve hot and enjoy!
