Japanese Oxtail Soup Recipe

Main Ingredients
- 2 lbs Oxtail
- 1 large Onion chopped
- 2 cloves Garlic minced
- 1 inch Ginger sliced
- 6 cups Water
- 2 tablespoon Soy sauce
- 1 tablespoon Mirin
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 2 stalks Green onions chopped, for garnish
1. Rinse the oxtail pieces under cold water and pat dry.
2. In a large pot, add the oxtail and cover with water. Bring to a boil and then drain and rinse the oxtail to remove impurities.
3. Return the oxtail to the pot and add the chopped onion, minced garlic, sliced ginger, and 6 cups of water. Bring to a boil, then reduce heat to low and simmer for 3 hours.
4. Skim off any fat and impurities that rise to the surface during cooking.
5. After 3 hours, add the soy sauce, mirin, salt, and black pepper. Adjust seasoning to taste.
6. Serve hot, garnished with chopped green onions.
