Japanese Pickled Bitter Melon Recipe

- 2 pieces Bitter Melon sliced
- 1 cup Rice Vinegar
- 1 cup Water
- 1 tablespoon Salt
- 2 tablespoon Sugar
1. Slice the bitter melon and remove the seeds.
2. Blanch the bitter melon slices in boiling water for 2-3 minutes, then drain.
3. In a saucepan, combine rice vinegar, water, salt, and sugar. Bring to a boil, then remove from heat.
4. Place the blanched bitter melon slices in a jar and pour the vinegar mixture over them.
5. Let it cool to room temperature, then refrigerate for at least 2 hours before serving.
