Japanese Pickled Daikon (Takuan) Recipe
This is a traditional Japanese pickled daikon recipe, known as Takuan. It's crunchy, tangy, and slightly sweet.

- 1 large Daikon radish peeled and cut into sticks
- ½ cup Rice vinegar
- ½ cup Sugar
- 1 tablespoon Salt
- 1 cup Water
1. Peel and cut the daikon radish into sticks.
2. In a pot, combine rice vinegar, sugar, salt, and water. Bring to a boil until sugar and salt dissolve. Let it cool.
3. Place the daikon sticks in a jar and pour the cooled vinegar mixture over them.
4. Seal the jar and refrigerate for at least 48 hours before serving.
