Ingredients 

Main Ingredients

  • 500 g Japanese plums (ume) washed and dried
  • 500 ml Rice vinegar
  • 50 g Salt

Instructions 

  1. 1. Place the washed and dried plums in a clean jar.
  2. 2. Add the rice vinegar and salt to the jar, ensuring the plums are fully submerged.
  3. 3. Cover the jar with cheesecloth and secure it with a rubber band.
  4. 4. Store the jar in a cool, dark place for at least 6 months, shaking it occasionally.
  5. 5. After 6 months, strain the liquid into a clean bottle. Your Japanese plum vinegar is ready to use.
