  • 1 lb Pork thinly sliced
  • 2 large Eggplants cut into bite-sized pieces
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Mirin
  • 1 tablespoon Sake
  • 1 tablespoon Vegetable Oil
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated

Instructions 

  1. 1. Heat the vegetable oil in a skillet over medium heat.
  2. 2. Add the minced garlic and grated ginger, and sauté until fragrant.
  3. 3. Add the pork slices and cook until browned.
  4. 4. Add the eggplant pieces and cook until they start to soften.
  5. 5. Pour in the soy sauce, mirin, and sake. Stir well to combine.
  6. 6. Continue to cook until the eggplant is tender and the sauce has thickened slightly.
  7. 7. Serve hot with steamed rice.
