Ingredients 

Main Ingredients

  • 4 medium Potatoes peeled and diced
  • 1 medium Carrot peeled and diced
  • ½ cup Frozen Peas thawed
  • ½ cup Cucumber thinly sliced
  • ½ cup Mayonnaise
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Sugar
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Boil the potatoes and carrots in a pot of salted water until tender, about 15 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooled potatoes and carrots with the peas and cucumber.
  3. 3. In a small bowl, mix the mayonnaise, rice vinegar, sugar, salt, and black pepper.
  4. 4. Pour the dressing over the vegetables and mix well. Adjust seasoning to taste.
  5. 5. Chill in the refrigerator for at least 30 minutes before serving.
