Instructions
1. Boil the potatoes in a pot of water until tender, about 10 minutes. Drain and set aside.
2. Heat the vegetable oil in a frying pan over medium heat. Add the boiled potatoes and cook until they start to brown.
3. Add the soy sauce, mirin, and sugar to the pan. Stir well to coat the potatoes evenly.
4. Cook for another 5 minutes, stirring occasionally, until the sauce has thickened and the potatoes are well glazed.
5. Serve hot and enjoy!
