Ingredients 

Main Ingredients

  • 1 cup Cooked rice
  • 2 cups Water
  • 1 cup Koji (fermented rice)

Instructions 

  1. 1. In a pot, combine the cooked rice and water. Heat until warm, but not boiling.
  2. 2. Add the koji to the pot and stir well.
  3. 3. Maintain the mixture at about 140°F (60°C) for 6-8 hours, stirring occasionally.
  4. 4. Once the mixture becomes sweet and thick, blend it until smooth.
  5. 5. Serve warm or chilled.
