Instructions
1. Preheat your oven to 160°C (320°F).
2. In a bowl, mix soy sauce, mirin, sugar, salt, black pepper, garlic, and ginger.
3. Rub the mixture all over the pork shoulder.
4. Place the pork in a roasting pan and cover with foil.
5. Roast in the preheated oven for 1.5 hours, or until the internal temperature reaches 70°C (160°F).
6. Remove the foil and roast for an additional 15 minutes to brown the top.
7. Let the pork rest for 10 minutes before slicing.
