Ingredients 

Vegetables

  • 2 cups Carrots sliced
  • 2 cups Bell Peppers sliced
  • 2 cups Zucchini sliced
  • 2 tablespoon Olive Oil
  • 2 tablespoon Soy Sauce
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine all vegetables.
  3. Add olive oil, soy sauce, sesame oil, salt, and pepper. Toss to coat.
  4. Spread vegetables on a baking sheet in a single layer.
  5. Roast for 30 minutes, stirring halfway through.
