Japanese Scallop Sushi Recipe
A simple and delicious recipe for making Japanese scallop sushi at home.

Main Ingredients
- 1 cup Sushi rice
- 1.25 cup Water
- 2 tablespoon Rice vinegar
- 1 tablespoon Sugar
- 0.5 teaspoon Salt
- 8 pieces Fresh scallops
- 1 sheet Nori (seaweed)
- 1 tablespoon Soy sauce for serving
- 1 tablespoon Wasabi for serving
- 1 tablespoon Pickled ginger for serving
Rinse the sushi rice under cold water until the water runs clear.
Cook the rice in a rice cooker with 1.25 cups of water.
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved.
Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
Cut the nori sheet into strips.
Shape the cooled rice into small oval mounds.
Place a scallop on top of each rice mound and wrap with a strip of nori.
Serve with soy sauce, wasabi, and pickled ginger.
