Ingredients 

Main Ingredients

  • 1 cup Sushi rice
  • 1.25 cup Water
  • 2 tablespoon Rice vinegar
  • 1 tablespoon Sugar
  • 0.5 teaspoon Salt
  • 8 pieces Fresh scallops
  • 1 sheet Nori (seaweed)
  • 1 tablespoon Soy sauce for serving
  • 1 tablespoon Wasabi for serving
  • 1 tablespoon Pickled ginger for serving

Instructions 

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Cook the rice in a rice cooker with 1.25 cups of water.
  3. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved.
  4. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
  5. Cut the nori sheet into strips.
  6. Shape the cooled rice into small oval mounds.
  7. Place a scallop on top of each rice mound and wrap with a strip of nori.
  8. Serve with soy sauce, wasabi, and pickled ginger.
