Ingredients

  • 2 cups Dashi stock
  • 1 cup Carrot, sliced
  • 1 cup Daikon radish, sliced
  • 1 cup Lotus root, sliced
  • 2 tablespoon Soy sauce
  • 2 tablespoon Mirin
  • 1 tablespoon Sugar

Instructions 

  1. 1. In a pot, bring the dashi stock to a boil.
  2. 2. Add the sliced carrots, daikon radish, and lotus root to the pot.
  3. 3. Add soy sauce, mirin, and sugar to the pot. Stir well.
  4. 4. Reduce the heat to low and simmer for about 30 minutes, or until the vegetables are tender.
  5. 5. Serve hot and enjoy!
