Japanese Skewer (Yakitori/Kushiyaki) Recipe

Main Ingredients
- 500 g Chicken Thighs cut into bite-sized pieces
- 1 bunch Green Onions cut into 1-inch pieces
- ½ cup Soy Sauce
- ¼ cup Mirin
- ¼ cup Sake
- 2 tablespoon Sugar
1. Soak the skewers in water for at least 30 minutes.
2. Thread the chicken and green onions onto the skewers, alternating between the two.
3. In a small saucepan, combine soy sauce, mirin, sake, and sugar. Bring to a boil, then reduce heat and simmer for 5 minutes. Set aside to cool.
4. Preheat the grill to medium-high heat.
5. Grill the skewers for about 10-15 minutes, turning occasionally and basting with the sauce until the chicken is cooked through and slightly charred.
