Ingredients 

Main Ingredients

  • 200 g Soba noodles
  • 4 cups Dashi broth
  • 2 tablespoon Soy sauce
  • 1 tablespoon Mirin
  • 1 teaspoon Sugar
  • 2 stalks Green onions sliced
  • 1 Nori sheet cut into strips
  • 1 Soft-boiled egg halved

Instructions 

  1. Cook soba noodles according to package instructions. Drain and set aside.
  2. In a pot, bring dashi broth to a simmer. Add soy sauce, mirin, and sugar. Stir until sugar dissolves.
  3. Add cooked soba noodles to the broth. Simmer for 2-3 minutes.
  4. Divide noodles and broth into bowls. Top with green onions, nori strips, and half a soft-boiled egg.
