Main Ingredients
- 2 tablespoon Vegetable Oil
- 1 large Onion, chopped
- 2 cloves Garlic, minced
- 1 inch Ginger, minced
- 1 lb Chicken Thighs, cut into bite-sized pieces
- 2 cups Chicken Broth
- 1 cup Coconut Milk
- 2 tablespoon Curry Powder
- 1 large Carrot, sliced
- 1 large Potato, diced
- 1 cup Bell Pepper, chopped
- to taste Salt and Pepper
Heat the vegetable oil in a large pot over medium heat.
Add the chopped onion, garlic, and ginger. Sauté until fragrant.
Add the chicken pieces and cook until browned.
Pour in the chicken broth and coconut milk. Bring to a boil.
Add the curry powder, carrots, potatoes, and bell pepper. Simmer until vegetables are tender.
Season with salt and pepper to taste. Serve hot.
