Japanese Spinach (Ohitashi) Recipe

Main Ingredients
- 1 bunch spinach
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon dashi stock
- 1 tablespoon sesame seeds
Blanch spinach in boiling water for 1 minute.
Drain and cool in ice water.
Squeeze out excess water and cut into 1-inch pieces.
Mix soy sauce, mirin, and dashi stock in a bowl.
Add spinach to the bowl and mix well.
Sprinkle with sesame seeds before serving.
