Ingredients 

Main Ingredients

  • 4 large eggs
  • 2 cups dashi stock
  • 1 tablespoon soy sauce
  • 1 teaspoon mirin
  • 1 pinch salt
  • 4 pieces shrimp, peeled and deveined
  • 4 pieces shiitake mushrooms, sliced

Instructions 

  1. In a mixing bowl, whisk the eggs gently.
  2. Add dashi stock, soy sauce, mirin, and salt to the eggs. Mix well.
  3. Strain the mixture through a sieve to remove any lumps.
  4. Divide the shrimp and mushrooms among four small cups.
  5. Pour the egg mixture over the shrimp and mushrooms.
  6. Cover each cup with aluminum foil.
  7. Steam the cups in a steamer for about 20 minutes, or until the egg custard is set.
