  • 2 large Japanese sweet potatoes peeled and cubed
  • 1 cup Mayonnaise preferably Japanese Kewpie
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 1 tablespoon Sesame seeds toasted
  • 2 stalks Green onions chopped

Instructions 

  1. 1. Boil the sweet potatoes in a pot of water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine mayonnaise, rice vinegar, sugar, and salt.
  3. 3. Add the cooled sweet potatoes to the bowl and mix until well coated.
  4. 4. Sprinkle with toasted sesame seeds and chopped green onions before serving.
