Ingredients 

Main Ingredients

  • 2 large Japanese sweet potatoes peeled and cubed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon ginger grated
  • to taste salt
  • to taste pepper

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the chopped onion and cook until translucent.
  2. 2. Add the minced garlic and grated ginger, and cook for another minute.
  3. 3. Add the cubed sweet potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until the sweet potatoes are tender, about 20 minutes.
  4. 4. Remove from heat and let cool slightly. Use a blender to puree the soup until smooth.
  5. 5. Return the soup to the pot, stir in the coconut milk, and heat through. Season with salt and pepper to taste.
  6. 6. Serve hot and enjoy!
