Instructions
1. Cook the soba noodles according to the package instructions. Drain and set aside.
2. In a pan, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute.
3. Add the carrots, bell pepper, and broccoli. Stir-fry for 5-7 minutes until vegetables are tender.
4. Add the cooked soba noodles and soy sauce. Toss to combine and heat through.
5. Garnish with green onions and sesame seeds. Serve immediately.
