Ingredients

  • 200 g soba noodles
  • 1 carrot, julienned
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 2 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 2 tablespoon green onions, chopped
  • 1 tablespoon sesame seeds

Instructions 

  1. 1. Cook the soba noodles according to the package instructions. Drain and set aside.
  2. 2. In a pan, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute.
  3. 3. Add the carrots, bell pepper, and broccoli. Stir-fry for 5-7 minutes until vegetables are tender.
  4. 4. Add the cooked soba noodles and soy sauce. Toss to combine and heat through.
  5. 5. Garnish with green onions and sesame seeds. Serve immediately.
