  • 1 medium Winter Melon peeled and cut into chunks
  • 4 cups Dashi Stock
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Mirin
  • 1 teaspoon Salt
  • 2 tablespoon Green Onions chopped

Instructions 

  1. 1. Peel the winter melon and cut it into chunks.
  2. 2. In a pot, bring the dashi stock to a boil.
  3. 3. Add the winter melon chunks to the pot and cook until they become translucent, about 15-20 minutes.
  4. 4. Add soy sauce, mirin, and salt to the pot. Stir well.
  5. 5. Simmer for another 5-10 minutes to let the flavors meld together.
  6. 6. Garnish with chopped green onions before serving.
