- 1 medium Winter Melon peeled and cut into chunks
- 4 cups Dashi Stock
- 2 tablespoon Soy Sauce
- 1 tablespoon Mirin
- 1 teaspoon Salt
- 2 tablespoon Green Onions chopped
1. Peel the winter melon and cut it into chunks.
2. In a pot, bring the dashi stock to a boil.
3. Add the winter melon chunks to the pot and cook until they become translucent, about 15-20 minutes.
4. Add soy sauce, mirin, and salt to the pot. Stir well.
5. Simmer for another 5-10 minutes to let the flavors meld together.
6. Garnish with chopped green onions before serving.
