Main Ingredients
- 1 tablespoon Vegetable Oil
- 1 large Onion sliced
- 2 cloves Garlic minced
- 1 inch Ginger minced
- 2 medium Potatoes peeled and cubed
- 2 medium Carrots peeled and sliced
- 1 lb Chicken Thighs cut into bite-sized pieces
- 3 cups Water
- 1 package Japanese Curry Roux
Heat the vegetable oil in a large pot over medium heat.
Add the sliced onion and cook until translucent.
Add the minced garlic and ginger, cook for another minute.
Add the chicken pieces and cook until browned on all sides.
Add the potatoes and carrots, stir to combine.
Pour in the water and bring to a boil. Reduce heat and simmer until vegetables are tender.
Add the curry roux and stir until completely dissolved. Simmer for another 10 minutes.
Serve hot over steamed rice.
