Ingredients 

Tempura Batter

  • 1 cup All-purpose flour
  • 1 cup Ice water
  • 1 Egg beaten

Tempura Ingredients

  • 8 Shrimp peeled and deveined
  • 1 Sweet potato sliced
  • 1 Zucchini sliced

Donburi Sauce

  • ½ cup Dashi
  • 2 tablespoon Soy sauce
  • 2 tablespoon Mirin
  • 2 tablespoon Sugar

Rice

  • 4 cups Cooked white rice

Instructions 

  1. 1. Prepare the tempura batter by mixing the flour, ice water, and beaten egg in a bowl. Do not overmix.
  2. 2. Heat oil in a deep fryer to 350°F (175°C).
  3. 3. Dip shrimp and vegetables into the batter, then fry until golden brown. Drain on paper towels.
  4. 4. In a small saucepan, combine dashi, soy sauce, mirin, and sugar. Bring to a boil, then reduce heat and simmer for a few minutes.
  5. 5. Serve tempura over bowls of cooked rice and drizzle with donburi sauce.
